Hi there! Sorry for disappearing yesterday. I’ve been waking up at 3 am to pump all week (even on the night we went to the Tribe game!) so I was barely functioning by Friday (#workingmomproblems). I slept through the night last night though and am feeling refreshed! After a 30-minute HIIT workout, I’m feeling even more energized. I just finished meal planning for next week, so I thought I’d share my plans with you…before the baby wakes up!
Monday: Red pepper and lentil bake. I mostly follow this recipe but omit the apple because I don’t enjoy fruit in my entrees. I’ll chop all the red peppers, cook the lentils and assemble the bake this weekend, so on Monday evening I just have to pop it into the oven.
Tuesday: Sante Fe Black Beans in the slow cooker. I’ll be trying this recipe. I use the slow cooker a ton in the fall/winter for soups but now that it’s getting warmer, I’m looking for more seasonally appropriate options. And I know I said I have a rule against trying new recipes during the week, but because I have to do all the work in the morning rather than during the rush after work, I feel OK about it. Plus the recipe is basically “throw the stuff in the slow cooker and eat when you get home” <– the best!
Wednesday: Leftovers. I have a Board meeting that night and it would be too crazy to make something for dinner. Between Monday and Tuesday, we should have plenty of leftovers anyway.
Thursday: Lemon Broccoli Pasta. I loosely follow this recipe.
Friday: Chicken sausage with baked sweet potato fries. This is our classic Friday night dinner. So simple but we love it!
