Hi guys! How did your week wrap up? I’m pleased to say I managed to squeeze in a little cardio yesterday afternoon between the grocery store and Mike and Vera arriving home (my office closes at 3 on Friday). That combined with our yummy usual Friday night dinner of chicken sausage and sweet potato fries, some epic playtime and baby laugh, and the Commodore Perry IPA I’m currently drinking as I type this up = an A+ end to the week.
Now let’s talk about next week…
The weather is looking chilly here for the foreseeable future, which is actually good for my meal plans, because I ROCK at making soups. For some reason, Mike doesn’t appreciate eating soup in the summer (crazy, right?), so I have to take advantage of the cooler temps!
Here’s what on the menu this week:
Monday: Chakchouka. I make it in the crockpot and it’s pretty much just veggies with poached eggs – very soup like. I’ll be sharing the recipe next week 🙂 I’m actually going to cook this up on Sunday because it only takes a few hours.
Tuesday: Vegetarian split pea soup. I should share my recipe for this soon, too. Vera’s teachers from her previous room at daycare begged me for it and they love it now 🙂
Wednesday: Broccoli lemon pasta. I actually had forgotten we didn’t make this last week when I reported out in Friday’s post – oops. But since I use frozen broccoli and other pantry staples, it’s not a big deal.
Thursday: A simple dinner of egg-and-avocado toast.
Friday: Chicken sausage and sweet potato fries – like I said, it’s our usual.
