The week hasn’t even started yet, but I’m already feeling lazy about dinner. Maybe it’s because I put together my meal plan on Thursday evening after I spent a lot of time in the kitchen making dinner, cleaning up and prepping/packing Vera’s lunch for Friday.
Monday: Dairy-free vegetarian frittata. I love frittatas – so easy to make, healthy and delicious. And of course the leftovers are yummy, too.
Tuesday: A lentil veggie dish in the slow cooker. Will just through lentils, veggies and broth in the slow cooker – nothing special but something we’ll all eat and enjoy.
Wednesday: Southwestern-style quinoa. Building off last week, I’ll cook up some quinoa and add black beans, frozen corn, maybe some tomatoes. Dinner = done.
Thursday: Frozen veggie burgers + roasted asparagus
Friday: The usual.
