Dinners we love that baby does, too

Even though Vera is still just a baby, I really want to set the tone for family dinners early. That’s part of the reason I strive to cook meals we can all enjoy. The other reason, of course, is simplicity!

I 100% realize it’s only a matter of time before my almost one-year-old kid actively refuses certain foods….I’m not naive. But for now, much of what I make for Mike and me, Vera also eats.

I thought I’d share a round-up of some of the dinners all three of us love!

  • Mustard-y lentils and quinoa –> although full disclosure, quinoa has been frustrating Vera lately because it’s too small for her to pick up but she can’t quite use a spoon yet
  • Veggies and eggs in the slow cooker {chakchouka}
  • Chicken sausage and baked sweet potato fries –> our Friday night staple
  • Turkey, veggie and pasta bake
  • Pasta with a quick marinara sauce
  • Broccoli lemon pasta
  • BBQ pulled chicken
  • Frittata
  • Split pea soup
  • Lentil minestrone soup
  • Black beans and rice
  • Shredded chicken and veggie soup

  1. Chicken sausage is one of my go-to quick meals! One of my favorite easy meals is a chicken sausage and kale soup – it has something like 4 ingredients and takes 20 min to make (I may be exaggerating slightly, but it’s easy!)
