Weekly Meal Plan – Week of 7/10

What’s on your menu this week?Happy weekend to you!  For our menu this week, I’m digging out a few classics we haven’t had in awhile.

When it comes to all the meals I prep and make, this quote really resonates with me:

A lot of recipes out there just seem way more complicated than they need to be. So, cheers to simplicity.

Monday: Mustard-y quinoa and lentils with roasted broccoli

Tuesday: Baked sweet potatoes with a southwest black bean topping (I actually bake the potatoes IN THE SLOW COOKER. I know, right?! Just set them in there by themselves and cook on HIGH for 4-5 hours. Amazing.)

Wednesday: Leftovers/out

Thursday: Zoodles with a simple marinara sauce

Friday: Takeout (we’re on a mission to use up a bunch of old food gift cards we have lying around)
