Even though it’s been rainy and humid this week, this is still my current state of mind:
I’m ready to dig into a warm, happy, carefree weekend, which is exactly what we have on the agenda. Before that, I wanted to recap the past week in workouts as well as share this coming week’s meal plan.
Last week’s workouts:
Friday: 20-minute swim (I planned to go for 30, but had to get out of the pool due to thunder and lightening. It was a major bummer, but 20 minutes is better than nothing!) Then I took Vera on a two-mile walk after work.
Sunday: 5-mile run
Monday: 45-minute swim 🙂
Tuesday: At-home bodyweight and kickboxing cardio intervals HIIT workout (link)
Thursday: 15-minute run + strength (my legs were still sore from Tuesday’s workout –> that video ALWAYS leaves me sore, even though it’s not one of the hardest HIIT workouts in my usual line-up)
This week’s meal plan:
Saturday: Quinoa risotto in the crockpot (link)
Sunday: At family’s
Monday: Pasta primavera
Tuesday: Sausage and peppers (in the slow cooker)
Thursday: Simple potatoes and egg salad
Friday: Chicken sausage and sweet potato fries
